General description
The Pastochef 18 RTL-I is a professional, multifunction cooking machine designed to automate numerous preparations in pastry, chocolate, ice cream, and gastronomy. It combines cooking, cooling, mixing, pasteurization, and preservation according to the selected programs. Each cycle guides the operator through the various steps, displaying temperatures and providing instructions for the gradual introduction of ingredients. Its capacity depends directly on the recipe being used, for example, 6 to 15 kg of Crème Excellent and up to 17 kg of Bavarian cream per cycle.

What sets this model apart
The Pastochef 18 RTL-I uses a dry bain-marie heating and cooling system, developed to limit the formation of deposits on the cylinder surfaces and maintain a consistent heat exchange. The inverter allows the stirring speed to be adapted to the preparation. The scrapers and removable paddle generate a vertical and horizontal helical movement to promote thorough mixing during the process. The machine has 18 pastry programs, 9 chocolate programs, 8 specialty programs, 7 gastronomy programs, 4 ice cream programs, and 5 free programs for recording custom cycles.
